No flour, no eggs, no dairy, just great potato waffles…the kind with the wonderful aroma of fresh green onions.

No real recipe here either, just the following from Ellen Switkes:

Grate one or more potatoes including skin. (That’s a healthy touch, too.) Dice up fine some green onion and add a pinch of salt.  Mix and spread evenly on a hot waffle iron which has been sprayed with Pam or similar cooking oil. Cook 10 to 15 minutes until done.

You can make as much as you like.  There is no fat if you use Pam, or a similar spray, and a non-stick waffle iron. Eat hot off the griddle.

Or, we would add,  use them in place of bread for a great sandwich filled with ham, chicken or roast beef or use them as a base for a quick main dish covered with fresh vegetables or tomatoes and basil.

Let your imagination go and your allergies to eggs, dairy or wheat…take a back seat.
