It's Fruity, It's Tropical, It's Pizza

Pizzas don't have to be hot and dripping with cheese and tomatoes. You can take that crust and play around with it to turn it into a cool main course or a dessert instead.

Take a look at this pizza, made with no eggs and no milk products. It's fruit pizza featuring pineapple, coconut, strawberry preserves and more. It's crunchy, and moist and just plain delicious.

If you want to try some other fruits on it, that's OK, too. For a patriotic theme you might use strawberries, blueberries and bananas. This recipe comes from the Food Allergy & Anaphylaxis Network, one of our featured links.

Fruit Pizza

11/3 cups flour
2 kiwi, sliced
1/2 cup light brown sugar, firmly packed
1 cup strawberries, sliced
1/2 teaspoon baking powder
1/4 cup strawberry preserves
1/2 cup milk-free, soy-free margarine, softened
1 tablespoon orange juice
2 tablespoons flaked coconut, toasted
confectioner's sugar
6 (1/2 inch) slices pineapple, halved

Preheat oven to 350 degrees. Grease 12-inch pizza pan. Set aside. In large bowl, combine flour, brown sugar and baking powder. Mix well. Cut in margarine until mixture is crumbly. Press crumbs into pan. Bake until golden, about 20 to 25 minutes. Set aside and let cool completely. Once cooled, sprinkle coconut evenly over crust. Top with fruit. Set aside. In a small bowl, combine preserves and orange juice. Stir will. Heat in microwave on high for 30 seconds or until melted. Drizzle over fruit. Chill pizza about one hour. Sprinkle with confectioner's sugar before serving.
