What is it that makes almost all of us a little Italian, even if we've never been there and nobody in our family was ever born there? It's the FOOD! Bravissimo! And just because you're allergic to wheat or eggs, you don't have to forsake that wonderful Italian dish, lasagna.

Here's a variation for lasagna. Use thin slices of eggplant, sliced lengthwise and roll them up with ingredients inside. Put seam-side down in baking dish. Top with additional sauce. It’s delicious and easy to serve.
