Milk-Free "Ice Cream"

This recipe was sent to us by Faye Mast of Manheim, Pennsylvania, who served it to dairy farmers who never guessed that it didn’t have milk in it.  She said, “My husband was my guinea pig as I developed it.  He didn’t mind.  We have a daughter who cannot have milk either. Both enjoy this.”

4 eggs beaten for at least 5 minutes in mixer
Then add:
1 1/2 cups light corn syrup
1/3 c. sugar
½ tsp. salt
Mix in alternately:
4 c. powdered non-dairy creamer without casinate or casin
1 qt. liquid non-dairy creamer
Microwave on high for 10 minutes.  Cool and add:
3 Tables. vanilla
Pour in a gallon ice cream freezer and fill to within 1 inch of the top. Freeze as you would regular ice cream.

Variant:
Omit 2 cups powdered non-dairy creamer.  Add just a little less than a quart of fruit puree sweetened to taste.
