No Flour Peanut Butter Cookies

If you are allergic to wheat but NOT to peanuts or eggs these cookies may just hit the spot, especially if you eat them warm.  They are soft and very moist…and very easy to make.  There are only three ingredients.

1 cup peanut butter
1 cup sugar
1 egg

Preheat oven to 350 degrees.  Lightly grease baking sheet.  Form dough into one inch balls or use a melon ball scooper to create balls. This may be easier since the mixture is not as firm as some other “ball” cookies.  They will spread in baking.

Bake for about 10-12 minutes and enjoy.
