Flourless Honey Pecan Bars |
If you can’t
eat foods containing flour but you can eat pecans, here is
a recipe for a sweet, chewy, quick and easy treat already tested
on teens.
The original
recipe was called Honey-Pecan Cake but since there is no baking
powder or baking soda in this recipe the “cake” is
very low, and therefore renamed “Bars.”
Honey-Pecan Bars
3 eggs
3/4 C. honey
12 oz. pecans, lightly toasted and ground
Preheat
oven to 350 F. Butter and generously coat an 8" cake
pan with superfine sugar. Set aside.
Beat eggs just until they start to lighten, then beat in honey
until well blended. Add pecans and stir to mix well. Pour into
prepared pan.
Bake in preheated oven about 40 minutes, or until firm and golden.
Cool before removing from pan.
This cake is excellent as is, but may be drizzled with chocolate
or dusted with a light sprinkling of cinnamon. Vanilla ice cream
is also excellent with it.
